Vatel Switzerland’s vintage in fermentation!

In a vine growing region like Valais, Vatel Switzerland had to, of course create its own wine. In part of the courses “Vintage wines”, students aren’t just learning theory but are taking action.


Mr. Alain Schenkel, Director of Food & Beverage at Hotel Vatel and Professor of Wine & Spirit at Vatel Switzerland, decided to partner up with Cave Fin Bec for this project.

It all began in early September, near the town of Sion, in the Fin Bec vineyard. It was 7am when students from the International Bachelor section began the harvest, the first step towards the creation of Vatel’s wine. 

A visit to the winery resulted in the discovery of the different processes of winemakeing.  The students finished their day with a tasting of grape varieties that will lead to the two Vatel wines to come: a red and a white blend. 

Before bottling in April, students also had to create two labels to dress the bottles. In addition to giving students the opportunities to better understand the process of developing a wine, this project will also allow them to offer Vatel restaurant customers the fruit of their labor.
