The contest took place on November 25that the CERM in Martigny.
The Grand Prix Joseph Favre has been imagined and created by Benoît Violer, Chef from the Hôtel de Ville de Crissier from 2012 to 2016. The restaurant had earned its 3 stars in the Michelin Guide and Benoit Violer was also elected as World’s Best Chef in 2016.
But who is Joseph Favre?
An illustrious Swiss cook born in 1849, he is one of the world’s first gastronomic journalists. In addition, he is one of the great theoreticians of the French kitchen. He will be the first known to codify the culinary art. In 1883, he created the Académie Culinaire de France.
Through culinary competitions, exhibitions and conferences, the aim of this academy is to democratize gastronomy.
Today, Franck Giovannini (3* in the Michelin Guide & 19/20 in Gault & Millau) is the successor of Benoît Violer at the Hôtel de Ville de Crissier and running the Academy.
Students had the pleasure meeting with him the first time during the “Tea, Wine, and Culinary Art” event that took place in September.
During the Jospeh Favre Grand Prix, Bachelor students were in charge of serving the frontline with more than 1000 guests and gastronomic figures in the spotlight of Guy Savoy (3* in the Michelin Guide and 2019/20 in Gault & Millau) Honorary President of the 2ndedition.
