We had the pleasure of welcoming back our second year students and talking to Xavier Magnin and Emma Comtet on their second internship experiences.
As Chef de Rang at L’Hotel de Ville in Crissier, Xavier explains to us what he discovered and learned working in a reputable 3* Michelin restaurant.
“I started my internship by being a Chef de Rang and thereafter had the opportunity to fully manage one of the halls in the last two months. This enriching experience during these past 6 months was very rewarding in regards to what I learned. The most valuable memory that I will keep from this experience is the appreciation we had from very satisfied guests when they left the restaurant.”
In front Office, Emma explains what it was like to work at the luxurious L’Alfred Sommier Hotel in Paris.
“L’Alfred Sommier hotel dates back to 1860. It was transformed from a family home into an independent luxury hotel located in the famous Madeleine district in Paris. Offering a unique and authentic experience, the hotel combines the charm and elegance of an old mansion with the comfort and services of a luxury hotel.
The reason I chose to work in the reception was to have a more complete and thorough vision of the front of the house as it’s the first impression and contact with guests. We must provide impeccable service when welcoming guests whilst conveying the values of the establishment. My mission was to do the check-in/check-outs, enter, modify, or cancel reservations as well as respond to numerous guest requests. Even if the tasks in reception seem fairly repetitive, no day was alike. There were different customer requests as well as different types of problems to be solved.
The experience reinforced my ambition in becoming a future manager in the hospitality field.”
