« Wonder V »: Pop-up restaurant made by students for students

Mr. Schenkel, Head of the Food & Beverages Department at Hotel Vatel Martigny and Chef Thierry Laurier challenged the students to open a temporary restaurant in just two weeks’ time.

« It is the Wonder V service team that has established everything from A to Z starting with the general theme of the restaurant, including the music, the atmosphere and the decoration, up to the management, with the different roles alternating and the planning of the shifts. », explains Elise, 2nd year student of the Bachelor program.


From the kitchen to the dining room, everyone went above and beyond to offer a varied menu to the students and an impeccable service.

Starters


-  Sea duo with avocado foam accompanied by an arugula salad with balsamic vinegar and breadsticks


- Valais cheese soufflé with a lemon sauce salad


Main courses 


- Marinated chicken cacciatora with olives, tomatoes and carrots accompanied with a puree of sweet potatoes and peas


- A mix of marinated sea bream, fried Jerusalem artichoke and mashed chickpeas with ginger


- Vegan option


Desserts


- Dark chocolate biscuit, milk chocolate mousse with bergamot ice cream and hazelnut nougatine


- Pinneapple flambé with a scoop of Chai Tea ice cream and passion fruit
